Green Fennel & Maple

As anise is a natural partner to maple, we thought we’d unite fennel and maple instead. We practice a bit of whole-plant butchery by juicing fresh fennel—bulb to frond—then simmer it slowly with fennel pollen and seeds. Cooked fennel absorbs other flavors heartily while staying true to its aromatic, licorice-y self. The addition of sweet cream mellows out the elegant combo.
