And while the versatility of the noble strawberry lends itself to any matter of manipulation, one of our favorite applications of this summer darling is straight up. This zingy, refreshing vegan sherbet combines summer strawberries' tartness with coconut's tropical notes.

We're not purists at heart, but we are Portland Proud, and this flavor is our desire to showcase PNW-grown strawberries, frozen at peak freshness and available year-round. Standing apart from our Strawberry Honey Balsamic flavor, this flavor offers a purer, classic strawberry taste. Unlike full-fat strawberry ice creams that struggle with preserving delicate berry flavors, this sherbet reduces fat content and incorporates coconut, enhancing the strawberry profile without overpowering it. Sherbet, distinct from ice cream with its lower fat content (about 4% compared to 14-17% in our ice creams), blends sorbet's refreshing, dense qualities with a hint of creamy texture akin to ice cream.

PNW-grown strawberries are the star of the show here. We buy them in bulk at the peak of the season and freeze them in summer so that we can make this flavor all year long. They are sourced from Treetop, a farmer-grown, farmer-owned cooperative in the heart of Washington State.
