Roasted Sunchoke Mock Apple Pie

Our grocery store produce sections are filled with picture-perfect fruits and veggies with nary a blemish—but what about all the less-than-gorgeous gems of the harvest? That’s where San Francisco’s Imperfect Produce comes in, creating affordable fresh produce deliveries that are half the price of their prettier counterparts. Imperfect Produce hooked us up with a pallet of organic, misshapen sunchokes, which we sliced up and baked into a pie filling bursting with cinnamon, lemon juice, vanilla, ginger, and burned sugar. Deceptively appley and totally delicious, the filling goes into a classic vanilla ice cream with nutmeg crumble.
