Jeweled Brown Butter Rice Gelato

with Pumpkin Seed Caramel & Verjus-Cured Currants

Chefs Sara and Sarah both come from incredible culinary pedigrees, bringing together years of experience at some of the best restaurants in the country. They opened Kismet in early 2017, a celebration of Southern Californian ingredients and Israeli-inspired complexity. For our collaboration, we knew we wanted to reimagine one specific dish at Kismet, their signature Jeweled Crispy Rice, in ice cream form.

We start with a browned butter and roasted rice gelato to mimic the dish’s rich, velvety texture, then add in two additional mix-ins by hand—plenty of verjus-soaked currants that give a fresh, clean pop, and ribbons of dark pumpkin seed caramel to offer up a bitter, nutty bite to cut through the gelato’s luxurious creaminess.
