Piping hot cornbread, fresh from the cast iron, slathered with wild huckleberry jam—but make it ice cream. Huckleberries are nearly impossible to cultivate, so we turned to our friends at NW Wild Foods to handpick bushels of these intensely sweet berries from the foothills of Priest Lake, Idaho. Churned into a striking purple ice cream, we layer in cornbread two ways: crumbles of rustic buttermilk cornbread scattered throughout, and a smooth cornbread pudding that brings an extra pop of nutty comfort. Hard to track down but easy to love, this scoop makes the hunt for huckleberries worth it.

This returning favorite features rare, wild-foraged huckleberries from the PNW, which are celebrated for their deep purple color and distinctive seeds. Huckleberries, the state fruit of Idaho and Montana, are notoriously difficult to cultivate, adding to their allure. Not to be outshone, our cornbread recipe is unique, made with a generous splash of buttermilk, which brightens the flavor and activates the leavening, resulting in a lighter, airier texture. To create the pudding, we blend the freshly baked cornbread with sweetened condensed milk until it achieves a luscious, jammy texture, capturing the essence of comfort and indulgence.
