Xocolatl de Davíd’s Miso Bar

Chocolatier David Briggs is an old friend, and his limited run Miso Bar is arguably the most coveted bar of chocolate in the city. To re-create the taste, we made ice cream following his recipe for chocolate with half sweet white miso and half savory red miso, which combine to create a wonderfully malty texture. Then we stir in a miso fudge, which brings out the chocolate and covers your taste buds in umami flavor.
