Imperfect Produce’s Candied Citrus & Whey Caramel

We teamed up with our favorite cheesemakers to create a market for one of the byproducts of cheesemaking: whey. We make the most of whey’s tart sweetness by caramelizing whey with sugar, buttermilk, cream, and a touch of salt for a frozen yogurt-style caramel ice cream. We then toss in handfuls of candied citrus zest that we got from our friends at Imperfect Produce.
