24 Blackbirds’ Lavender Truffle

Mike Orlando was a marine biologist and an analytical chemist before turning his talents to making chocolates. He created a recipe for a lavender truffle in his lab, and sent it to us along with his chocolates. We start with a lavender and pink peppercorn ice cream, and then swirl in streaks of white chocolate lavender fudge while it’s still soft-serve texture, which gives it the creamy texture of his wonderful truffles and streak in flakes of his dark chocolate.
