That’s why we churn a dense, decadent vanilla custard, then drizzle in housemade butterscotch. Brown sugar and butter melt together before cream and a splash of scotch whisk in, creating smooth, buttery swirls that amplify vanilla’s romantic, smoky character. When simplicity is done right, it’s anything but dull.

Vanilla is a crazy complex ingredient, made up of more than 220 chemical compounds. Yet it’s also incredibly delicate, which is why custard is one of the best ways to serve it. The egg yolks and high percentage butterfat help carry vanilla's subtle flavor across your tastebuds, lingering longer and making the most of such a nuanced ingredient.

Unlike its cousin caramel, butterscotch leans into the bittersweet character of brown sugar. Our housemade version is spiked with scotch to enhance its smoky, peaty profile. Whisky isn’t a traditional ingredient in butterscotch, but we like to think it’s a happy linguistic accident—one that hints at the secret to an even better version of the classic.
