There are a few ‘holy trinities’ in the culinary world, and when it comes to dessert, the combination of strawberry, vanilla and cinnamon is undoubtedly one of them. We start by roasting macerated strawberries, deepening their flavor so that they hold their own against the richness of cream and sugar. Vanilla and cinnamon come into play through a spiced tres leches cake, soaked in three (yes, three!) kinds of milk for a melt-in-your-mouth cake swirl. Most strawberry ice cream is laden with artificial extract—but not ours. We worked really hard to pack as much strawberry flavor as possible into the ice cream, which is why we macerate the berries (toss them with sugar and lime juice and let them sit) to enhance their flavor. Then, we roast them to get rid of moisture and caramelize the natural sugars. These ultra-rich strawberries blend into our 17% butterfat base, which then gets streaked with strawberry jam for an extra dose of strawberriness.
