There’s something majestic about Pineapple Upside Down Cake. Popularized in the 1920s, its glossy, caramelized crown is a thing of beauty—and somehow, Claire Saffitz made it even better. We teamed up with Claire to translate a recipe from Dessert Person, her sweet-studded cookbook, into a brand new scoop. Sweet cream ice cream, brightened with pineapple juice, cinnamon and a pinch of salt, sets the stage for the star: the cake itself. Fresh pineapple and ground pecans simmer into a compote, then fold into a batter of flour, butter, and eggs to create a deliriously delicious cake. Gooey rum butterscotch, riffing on the dessert’s signature caramel topping, drizzles through the cake-speckled ice cream. It’s our holiday à la mode moment.

We wanted to capture the feeling of pineapple upside down cake à la mode, all inspired by Claire Saffitz’s recipe from her cookbook Dessert Person. Hunked through a sweet cream ice cream, the pineapple cake is a faithful take on Claire Saffitz’s recipe from her cookbook Dessert Person—all down to a rum butterscotch to recreate the cake’s signature glossy top. It mimics the dessert’s caramelized finish and provides a rich, brown ribbon that cues the gooey upside-down experience.

We’re beyond thrilled to collaborate with chef, recipe developer, and best-selling author, Claire Saffitz, to create two new flavors for this year’s Holiday Series. Claire has a gift for making even the most impressive desserts feel doable at home, and you may recognize her from her time at Bon Appétit, her YouTube series, or her two cookbooks: Dessert Person and What’s for Dessert. Trained in pastry at Le Cordon Bleu in Paris, Claire has gained a loyal following of home bakers who want to learn, experiment, and of course, indulge. We love her thoughtful approach to baking and how elegant, yet accessible, her recipes are.
