We first introduced this flavor in 2016, and we’re excited to bring it back for this year’s Farmer’s Market Series! We start by pouring off the brine from Grillo's Pickles; only the liquid is used for the sorbet base, avoiding the “cooked” taste of using whole pickles. Instead, fresh cucumbers are puréed and blended with the brine, sorbet base and fresh dill, bringing out a crisp, clean flavor. The cucumber and dill amplify the brightness of the brine, keeping the sorbet vibrant and refreshing.

Our Kitchen Team tasted 14 different brands of pickles before landing on Grillo’s Pickles! Their pickles’ clean, herbaceous flavor and satisfying snap made them the overwhelming favorite. The brine has just the right balance of herbs and spices: bright and aromatic without being overpowering. Unlike other brands, which leaned too heavily on garlic or coriander, Grillo's Pickles delivered a gentle, fresh acidity that blended seamlessly into the sorbet. Grab a pint of sorbet for your freezer and a tub of Grillo’s dill spears for your fridge.
