A flavor 2,000 years in the making. The ancient Romans struck the perfect balance of sweet and salty with prosciutto e melone, and the dish has been a mainstay of Italian summer tables ever since. Juicy wedges of ripe cantaloupe, draped in paper-thin slices of dry-cured ham, are both refreshing and indulgent. Inspired by this centuries-old pairing, we’ve crafted two distinct ice creams. First, prosciutto is gently toasted and reduced to a savory salt, then churned with cream, sugar, and honey into a rich, umami-packed candied prosciutto ice cream. It's paired with a swirl of our fresh cantaloupe ice cream for a bright, fruity contrast that proves the Italians knew exactly what they were doing.
