Hazelnut Chocolate Cookies and Cream (v)

We start with our favorite dairy-free chocolate base: chocolate barley milk. Unlike coconut milk, which adds its own flavor, barley milk is clean and lets the Cloudforest chocolate truly shine. A touch of hazelnut butter is blended in, adding a subtle, background note that ties everything together seamlessly.

We use Cloudforest chocolate to make homemade—and gluten-free—Oreos, filling them with a chocolate hazelnut filling created with Cloudforest’s Magic Spread. To finish this decadent riff on a classic flavor, we drizzle housemade hazelnut chocolate fudge throughout.

Cloudforest was founded by Sebastian Cisneros, who was enchanted with the idea of chocolate making at a very early age in his home country of Ecuador. After moving to Portland in 2007, he eventually opened Cloudforest, and is now one of Portland’s most talented chocolate makers. His “Magic Spread” celebrates his love for his home (Ecuador) and his adopted home (Portland) by bringing together two iconic ingredients—chocolate and hazelnuts—into one rich and delicious treat.
