Gingerbread Cookie Dough

Another classic from Grandma Malek’s kitchen. We recreate her famous Cry Baby Cookies—or gingerbread molasses cookies—to make a gooey cookie butter, which we layer into our rum royal icing ice cream. To double down on the dough, we chop even more freshly baked gingerbread cookies and fold them into the mix, making sure there are bits and pieces of spiced gingerbread in every bite.
