A celebration of a single, limited-release cider from Finnriver, the cidery leading the Pacific Northwest’s hard cider renaissance. On eighty acres of protected farmland, Finnriver honors the region’s legacy of apple fermentation while exploring its possibilities. Enter “Autumn Blush,” their marriage of organic Washington-grown Granny Smith and Pink Lady apples and black currants. We’re not ones to mess with perfection, so we simply turn their pink sparkling cider into pâte de fruits, then complement the bright, chewy bursts with a delicate apple-and-black-currant infused sherbet and let the cider shine. Sherbet is the perfect vessel to bring the delicate flavors of Finnriver’s “Autumn Blush” cider to the Salt & Straw menu. Inspired by the French-style Kir cocktail, it’s a crisp, half-dry cider with layered earth tones and a lighthearted sweetness. We blend it with our 4.5% fat sherbet base for a quick, intense hit of the fruit-forward flavor, but with enough cream to keep the dark, jammy black currant lingering on your tongue.

We further highlight Finnriver’s sparkling cider by using it in house-made pâte de fruits. We simply blend the cider, pectin and sugar together to make the gummy candies, then hand cut them into small squares to stir into the sherbet.

Every day, Finnriver asks, “How can we serve the land with cider?” Located in the remote Chimacum Valley in Washington, Finnriver is a certified B corp, organic farm, orchard, and cidery. Their orchard features 6,000+ organic heirloom and traditional cider apple trees, which protects the genetic diversity and cultural heritage of these old varieties. They blend traditional apple fermenting practices with innovative techniques to produce premium, award-winning ciders. We pay tribute to Finnriver’s incredible black currant and apple “Autumn Blush” cider with this sherbet.
