To transform the classic NYC bagel into an ice cream, we called on our friends at the buzziest and most innovative bagel shop around: PopUp Bagels. Their rippable, dippable, crispy-crusted bagels have been dubbed “Best Bagel” two years in a row by Brooklyn Bagelfest—and they boiled and baked cinnamon raisin bagels just for us. We chop them up and candy the pieces, creating a crunchy crème brulée shell around each chewy morsel to protect it from the salted sweet cream ice cream. A cinnamon-spiked cream cheese ribbons throughout, because every great bagel needs its schmear.

In order to keep the inside of PopUp Bagels’ cinnamon raisin bagels tender and chewy, we toss the pieces in sugar and bake them in the oven for about 20-25 minutes. The sugar caramelizes and creates a hard shell around the bagel itself (similar to the crisp top of a crème brulée) which protects each piece from the ice cream.

Cream cheese is whipped with sour cream to create the “schmear” swirl. A touch of cinnamon is added to help reinforce the flavor of the bagels before it’s ribboned throughout the salted sweet cream ice cream.

New York City has long had a very specific definition of “bagel,” and in 2020, Adam Goldberg dared to challenge it—with undeniable success. His versions of the iconic boiled-and-baked bread are smaller, airier and crisper than classic offerings, with a texture closer to a baguette. In just a few years, PopUp Bagels has exploded and now operates 11 locations across New York, Connecticut and Massachusetts, often with lines wrapped around the corner waiting for a freshly baked bagel and creative schmear.
