For Sebastian Cisneros of Portland’s Cloudforest, chocolate is personal—his single-origin cacao (sourced from his native Ecuador) often marries ingredients sourced from his home in the Pacific Northwest. Inspired by Cloudforest's Nest bar, this scoop blends our one-of-a-kind honey milk chocolate frozen yogurt—sweetened with local Oregon honey—with ribbons of caramelized, toasted-buttermilk fudge. Spiced graham cracker crumbles add a cozy, malty swirl, while hunks of dense, ganache-y chocolate cake make it a decadent celebration that’s definitely worth writing home about.

Cloudforest’s Nest Bar is described as “the satisfaction and comfort of a warm little nest in the woods,” and we set out to capture that same cozy feeling in ice cream form. We begin with an Oregon honey milk chocolate frozen yogurt—a subtle nod to Cloudforest’s Pacific Northwest home—chosen for its gentle tang and comforting richness. The real magic happens with the buttermilk, which we dry-toast just until it begins to caramelize, then cook into a gooey fudge ribbon. The result is a uniquely comforting sweetness reminiscent of caramelized yogurt, woven throughout the scoop. Finished with spiced graham cracker crumbles and tender chocolate cake, this flavor invites you to slow down, cozy up, and savor every bite.

Cloudforest was founded by Sebastian Cisneros, who was enchanted with the idea of chocolate making at a very early age in his home country of Ecuador. In fact, the company is named for Ecuador’s own cloud forests—stunning, misty ecosystems located in the Andes mountains. After moving to Portland in 2007, he opened Cloudforest, and is now one of the city's most talented chocolate makers, known for his bean-to-bar approach and maintaining total control over Cloudforest’s single-origin creations from cacao pod to finished bar.
