Inspired by Fran’s iconic Chocolate Almond Gold Bar, this scoop folds generous pieces of the bar into salted vanilla ice cream, layering in ribbons of burnt caramel and dark chocolate stracciatella for depth and contrast. The result is a timeless, indulgent flavor that balances sweetness, texture, and chocolate richness in every bite.

Fran Bigelow founded Fran’s Chocolates in Seattle in 1982 after being inspired by European chocolate-making traditions during a trip to Paris. Her Chocolate Almond Gold Bar—filled with caramel and studded with almonds—quickly became a local favorite and remains one of the brand’s most beloved creations. Today, Fran’s Chocolates is run by her family (although you might see her in the test kitchen once in a while!) and celebrated worldwide—rumor has it, Barack Obama himself used to gift Fran’s caramels to guests of the White House during his time in office. Talk about good taste!
