Apple and Cheddar Cinnamon Rolls

Cheddar cheese is the perfect topping for apple pie, and this scoop proves it. We melt down Beecher’s Flagship Cheese, a nutty, white-cheddar-style cheese, and churn it into our classic 17% butterfat base for a nutty, slightly salty ice cream. Baked sheets of apple pie coffee cake, packed with tart Granny Smith filling and topped with cinnamon streusel, fold in for soft, spiced bites mimicking cinnamon rolls. Finally, ribbons of thick cinnamon roll “goo” finish this fan-favorite.

Beecher’s Handmade Cheese is a Seattle-based cheesemaker known for its award-winning Flagship, a robust, nutty cheddar-style cheese. Founded in Pike Place Market, Beecher’s makes all of its cheeses using pure, additive-free milk and time-honored techniques. We first partnered with them when we opened in Seattle back in 2018, and it’s a partnership we keep coming back to, finding new ways to showcase their incredible cheese.
