We like wild things, and the elusive huckleberry is about as wild as berries get. Our debut serving of a truly unique flavor features rare, wild-foraged huckleberries from the PNW, which are celebrated for their deep purple color and distinctive seeds. Huckleberries, the state fruit of Idaho and Montana, are notoriously difficult to cultivate, adding to their allure. Not to be outshone, our cornbread recipe is unique, made with a generous splash of buttermilk, which brightens the flavor and activates the leavening, resulting in a lighter, airier texture. To create the pudding, we blend the freshly baked cornbread with sweetened condensed milk until it achieves a luscious, jammy texture, capturing the essence of comfort and indulgence.
