Initially a seasonal flavor, this became a classic menu staple due to its popularity. To achieve a creamy, floral flavor, we warm honey and water to a simmer, stir in lavender petals, and let it steep, avoiding the aromatic taste of oil extracts. This method creates a "lavender tea" flavor that highlights the greenness of the lavender for a more palatable ice cream, with honey providing gentle base notes. We source our honey from Bee Local Honey in Portland, capturing the essence of local pollination. Although the steeping process results in a brownish color, we use dried berry skin powder to naturally achieve the essential purple hue.

We use the good stuff from Bee Local, which harvests honey from urban hives in local Portland neighborhoods. That means when you taste the honey in this flavor, you're getting a spoonful of the pollinated essence of Portland in each bite. Much like single-origin coffee, Bee Local never blends their honey, allowing for distinct flavors, colors, and viscosities directly resulting from the local forage available to the bees. These bees shop locally, and so do we.
