Before we go any further, let’s discuss: Is drinking pickle juice from the jar a guilty pleasure for anyone else? We highlight a lighter, sweeter side of pickles’ acidity, focusing on spices like dill and fennel and stopping the fermentation while the cucumbers still have a bright freshness. To show how delicious fresh cucumbers are, we juice pickled cucumbers and spin it into a sorbet.
