Bone Marrow & Smoked Cherries

This flavor marks the first time we consulted our own city’s wealth of resources to create amazing ice cream. Michael Madigan of the culinary incubator KitchenCru, in giving Tyler one of his three only jars of smoked cherries in the world, offered up the missing piece—smokiness—which married the savory marrow and sweet cream. Incidentally, he also suggested spiking our Strawberry Honey Balsamic ice cream with black pepper. The incorporation of bone marrow into cream helped Tyler determine the best way to emulsify fats, which paved the way for other fat-based flavors such as Arbequina Olive Oil.

Shipping Cutoffs: Our shipping cutoffs are Wednesday at Noon PST for 2Day or Ground and Thursday at Noon PST for overnight delivery. We ship Monday through Wednesday for 2Day and Ground and Monday through Thursday for Overnight. 2nd Day or Ground orders placed after 12:00pm PST on Wednesday and Overnight orders placed after 12:00pm PST on Thursday, will be shipping the following Monday. We start with dark, sweet cherries which we smoke, age in a sweet bourbon syrup, then fold into a luscious bone marrow ice cream, made with slow-roasted, clarified bone marrow blended with cream and sugar. The result is an ice cream with an unbelievably velvet texture and a taste unlike any other.
