Introducing the Stuffed Crust Waffle Cone

Cheesy. Caramelized. Goodness.

We’re always inventing unbelievable things here at Salt & Straw, but we have a special creation hitting the waffle irons at our scoop shop on NW 23rd Street in Portland. This is no ordinary waffle cone. It’s a flaky, buttery puff pastry shell stuffed with oozy Oaxacan cheese, and then griddled until it gets a caramelized crème brûlée crust.

Now, we know what you’re thinking: Cheese…with ice cream?! It might not sound like something you’d want to eat, but trust us. Oaxacan cheese has a super mild flavor (kinda like mozzarella), which means it kinda goes with anything and everything, whether savory or sweet. Once you add in a sugared, crackly crust, you won’t even remember what a regular waffle cone tastes like.

All of our scoops pair well with the stuffed cone, but a few do stand out: Double Fold Vanilla, Coava Coffee with Freckled Woodblock Chocolate, and Roasted Strawberry Coconut.

Right now the cheesy creation is only available at our Portland flagship, but stay tuned to see if it makes a debut in your area.
