Xocolatl de David’s Oaxacan Honey & Pasilla Fudge

Our attempt to pay homage to the rarity of heirloom cacao and rich history of making chocolate, in ice cream form. Driven by classic technique but unfettered by convention, the godfather of Portland confections and founder of Xocolatl de David, David Briggs, has been teaching us about preserving the integrity of artisanal chocolate in ice cream since the beginning. Our ice cream is a nod to his research in Mexico and subsequent smoked chile and honey bar, delivering swaths of rich, Oaxacan-chile-spiked fudge throughout a singular Oaxacan honey base.
