Wildflower Honey with Ricotta Walnut Lace Cookies

The honey we get this time of year from our good friends at Massey Honey is flavored with fresh spring wildflowers, which makes for perfect ice cream. Especially when we add a little creamy ricotta and tart lemon. For some texture, crunch and added deliciousness we fold in pieces our homemade whole oat and walnut lace cookies, frosted with buttery ricotta icing. Somehow it tastes light and refreshing and sweet and rich at the same time.
