The Elvis Peanut Butter Banana Split (v)

Every year, we make an ice cream to celebrate the King’s favorite food—peanut butter, bacon, and banana sandwiches—to honor his birthday on January 8th. For our 2019 take, we put a spin on one-ingredient banana “soft serve” by blending super-ripe bananas into coconut ice cream with a bit of creamy cashew butter. Swirls of marionberry jam join the party along with bits of crunchy peanut butter “bacon” brittle made with our own smoky toasted coconut bacon candy. It’s overwhelmingly sweet and salty at the same time, which we’re pretty sure is just how Elvis liked it.
