Smoked Sea Salt w/ Chocolate-Covered Feuilletine

We developed a cherry-wood smoked sea salt-based ice cream with chocolate-covered feuilletine folded into it, a light and crispy french delicacy. The chocolate-coating comes from a tempered single-origin chocolate from Woodblock Chocolates, while the salt is Japanese cherrywood-smoked salt from the craft salt shop, The Meadow. This flavor was originally created with Naomi Pomeroy of Portland’s Beast Restaurant for our July 2012 Seasonal Chef Series.
