Schilling Cider Caramel Apples

This one captures the joy of biting into a freshly dipped caramel apple at a roadside farm stand. We worked closely with Seattle’s Schilling Cider to create a cider syrup using a traditional blend of London Dry Cider apples that’s mouth-puckeringly tart, which we swirl into a creamy apple ice cream. We then ribbon in a hand-burned vanilla caramel to sweeten up the sour-apple brightness of the ice cream.
