We made this ice cream with everyone in mind: vegans, those with gluten sensitivities, and those who put deliciousness at the center of their belief system. This freakishly delicious creamy coconut ice cream is studded with chunks of Petunia’s strawberry rhubarb pie and dotted with homemade cornmeal crumble. Every bite is different: refreshingly coconutty, then mellow with rhubarb tartness, then sweet, then salty. It is primally satisfying.
