Peach Crumble Bars (V)

A tribute to late summer’s cobblers, pies, shortcakes, and buckles. We chop up freshly baked peach crumble bars filled with jammy stone fruit goodness from one of our favorite vegan and gluten-free bakeries in Portland, Petunia’s Pies & Pastries. We stir them by the handful into an impossibly delicious lightly spiced coconut ice cream streaked with caramel ribbons that’s every bit as indulgent as our signature ice cream recipe, only without the dairy!
