Ococoa’s Whiskey Caramel Truffle

It’s nearly impossible for us to choose a favorite from Chocolatier Diana Malouf’s menu of exquisite buttercups and truffles, but if pressed we’ll choose her Peat Smoked Caramel. In fact we’ve been trying to perfect it in ice cream for years, and this winter we finally did. To mimic the warm, smoky flavor we spike caramel with whiskey and swirl it into ice cream made with chocolate and more whiskey.
