Happy Birthday Elvis!

Every year we make an ice cream in honor of Elvis to celebrate his birth month, mostly because we can’t resist making ice cream inspired by his love of peanut butter, bacon, and banana sandwiches. This year we made a banana coconut ice cream, so thick it eats like a gelato, and then swirled in both marionberry jam and peanut butter fudge. Finally we stir in shaved coconut cooked in a mix of tamari, smoked tea, and maple syrup so it’s candied to taste exactly like bacon. It’s overwhelmingly sweet and salty at the same time, which we’re pretty sure is just how the King liked it.
