Green Apple & Wasabi Flowers Sorbet (v)

Tart green apples and floral, locally grown wasabi dance together in this fragrant and refreshing sorbet. We use real wasabi from Oregon’s Frog Eyes Farm—which unlike the green-dyed horseradish we’re used to seeing alongside sashimi at more sushi restaurants has a surprisingly sweet flavor with much less sinus-clearing spice. We gently grind and juice the whole wasabi plant (including the flowers, leaves, and tender root) to make the most of this amazing ingredient, and add fresh green apple juice for that super bright boost that takes this sorbet over the top!
