Freckled Woodblock Chocolate

Woodblock chocolate, Portland’s first bean-to-bar company, is a longtime friend that accentuates the unique characteristics of single-origin beans through different roasting methods in ornate century-old drums. Their chocolate gets churned with cream, sugar, and a bit of Jacobsen sea salt—the first to harvest salt from the Oregon coast in over 200 years. Then, as the ice cream pours out of the machine, we debuted the old-school technique called “freckling” to suspend more chocolate in an untempered state, leaving a million tiny chocolate freckles that melt in your mouth.
