A coconut based, non-dairy ice cream made in collaboration with our good friends at Petunia’s Pastries. Petunia’s salted caramel bars are special because they are both vegan and gluten-free, but are so delicious that we would be none the wiser! For a bit of extra yumminess we swirl in hand-burned caramel and housemade chocolate ganache.
The caramel is specially made for this flavor and is vegan, it’s made by hand-burning sugar and coconut cream together until it is dark and rich with deliciousness. Our chocolate ganache is also vegan and is made with Almond milk instead of dairy.
The base of this ice cream is made with toasted coconut cream and should have a creamy texture similar to our ice cream.
We mix in salted caramel bars from Petunia’s pastries. These are made with a bit of banana, almond flour, and vegan caramel.
Here’s a bit about Petunia’s: Petunia’s Pies & Pastries is a flourishing gluten free & vegan baking business in Portland, Oregon. Owner Lisa Clark’s creative vision began as a child as she learned to bake with her mother, and evolved as she discovered her own food intolerances as an adult. After losing her mother, she was inspired to pursue their bond together in a new way, so she could still enjoy the things they made together. She began developing her own recipes in 2010, selling in a few Portland farmers markets. Her pastries are now available in New Seasons, Stumptown cafes, Elephant’s Deli, etc. Treats & baking mixes are available at their downtown brick & mortar bakery, farmers markets, many Portland area retailers and cafes.
