When we first came across Hey Boo’s indulgent, beautifully intense, and custardy coconut jam—known as srikaya in Indonesia—we were instantly inspired to craft an entire flavor around the unique ingredient. We swirl the creamy coconut goodness through a simple salt and vanilla ice cream to let its flavor shine through, then add chocolate-covered candied rice clusters (like caramel corn but made with puffed rice) for a bit of fun crunch.
