Cocanu’s Coffee & Craque

It’s pretty clear that everything Sebastian Cisneros of Cocanu makes is made with love. It was hard for us to pick just one flavor from his repertoire of chocolates because he is consistently surprising us with ingredients like Palo Santo wood chips, baked milk, or bee pollen and showcasing them in single origin chocolates that he has roasted himself. For this flavor, we worked with Sebastian to tell a story using single origin chocolates and coffee beans in a coffee, caramel ribbons, and chocolate ice cream with candied cocoa nibs (a candy that Sebastian dubs “craque”). This is a gentle roller coaster of flavors ranging from the acidic highs of an Ecuadorian single origin chocolate to the melodic lows of a beautifully cold brewed coffee.
