An international celebrity in the chocolate world, Maya Schoop-Rutten is the authority on good chocolate. Her intricately flavored and decorated confections are made out of a sincere love for chocolate itself. When sitting down with Maya, it was evident that the only way to eat chocolate in frozen form of chocolate was as a sorbet using her favorite chocolate, Fortunato No. 4, from Northern Peru. A chocolate sorbet, without dairy, is unadulterated. A chocolate sorbet is rich and luscious without the butterfat to get in the way. Definitely one of the most difficult flavors we have ever created at Salt & Straw, we hope that this one lives up to Maya’s standards!
