Beet Red Velvet Cake (v)

Deep maroon and super yummy, this ice cream is beets at their best. We stir big chunks of homemade super-dark (and gluten-free) chocolate cake into a delicate chocolate and beet coconut ice cream, then swirl in ribbons of vegan vanilla cheesecake. Our beets come from Zenger Farm, which focuses on educating urban youth about the importance of farming, food, and environmental stewardship—plus their beets can’t be beat!
