Bar Au Chocolat’s Poire Belle Helene

Nicole Trutanich is one of the most thoughtful chocolate makers we know, so it’s no surprise she introduced us to a 19th century recipe of poached pears with poured over chocolate and a little cream called Poire Belle Helene. To create it in ice cream, we poached candied pears in sugar, lemon peel and pear juice, and add that along with some toasted almonds to a simple vanilla ice cream made with her surprisingly bright and fruity chocolate fudge. Yes, it tastes as good as it sounds.
