Bacon Raleigh Bar w/ Xocolatl de Davíd

Inspired by the same chocolatier who solved the mysterious Case of the Missing Caramel (see “The Story of Salt & Straw”), this recipe marked our first seasonal menu with one cohesive story, determining our signature move of creating new flavor series every month. It was also our foray into the technique of infusing caramel with different flavors, in this case bacon fat. But why stop there? Along with bacon caramel we layer chocolate fluff and chocolate-covered candied pecans into sea salt ice cream for a sweet umami explosion that really satisfies.
