Almond Brittle w/ Salted Ganache

Grandma Malek, from whom our head ice cream maker Tyler learned to cook, has always made the best almond brittle this side of the Orion Nebula, her special-occasion ace in the hole. Our kitchen makes it just like she does, cracks it by hand into ample pieces, then takes poetic license for added indulgence by accompanying it with chunks of housemade salted chocolate ganache that remain soft when frozen and creamy vanilla ice cream. Each bite provides something a little different in taste and texture, so widely appealing yet so familiar.
