Iris Liqueur & Edible Flowers Sorbet (v)

Ice cream isn’t the only thing you can make out of spring blooms—you can also make spirits! Iris Liqueur is a beautifully floral Florentine-inspired liqueur made in Eugene, Oregon by Elixir Craft Spirits using the roots of the iris flower. We create a sorbet with this golden liqueur and jewel each batch with hand-placed organic edible flowers (like pansies, borage, begonias, nasturtiums, rose petals, and orange blossoms) preserving the fragile blooms as if encapsulating them in sweet, edible amber.
