For just under a year, Rudy Speerscheider has been churning out delicious ice cream at our Alberta scoop shop. But his adventures in ice cream began long ago. Rudy once helmed the tiny kitchen of a beloved North Portland food cart, Junior Ambassador's. Armed with only four quart-sized ice cream makers and a constant stream of fantastical flavor ideas, Rudy honed both is scoop and his worldview. To this ice cream aficionado, the frozen food can be a portal to unexplored culinary ideas and brand new communities -in short, the entire universe in a cone. This led to the search for a flavor inspired by the universe itself, and as Rudy found himself transported (via an ice cream portal, naturally) to Salt & Straw's kitchen, he was set on making that flavor a reality. The result: The Universe, a truly black ice cream, dark as space, swirled with vanilla galaxies and stars that, over the coming seasons, will be populated by tasty planets -inspired by flavor suggestions from Salt & Straw friends and fanatics.
